Apple & Cinnamon Swirls

Add a touch of festive magic to your baking with these irresistible Apple & Cinnamon Swirls! Using Sowans Gluten-Free Scone Mix, we’re transforming a classic scone base into soft, golden swirls filled with a velvety apple purée and warm cinnamon spice.

The apple purée is quick and easy to prepare, lending a rich, fruity sweetness that pairs perfectly with the cinnamon sugar filling. The gluten-free dough rolls effortlessly and bakes to perfection, creating a beautiful swirl that’s as stunning as it is delicious.

Makes 10-12 swirls.

Prep time 30 mins including refrigeration.

Base:

1 pack of Sowans scone mix

1 tsp ground cinnamon

110g butter

2 small eggs or 1 large egg

50ml of natural yoghurt

1 tablespoon of gluten free flour (for rolling)

Method:

1. Put the scone mix into a dry bowl, add the ground cinnamon crumble in the butter with your fingers.

2. In a small bowl mix the yoghurt with the egg yolks.

3. Mix the liquid into the dry mix.

4. Turn the mixture out onto a well-floured lined baking sheet, sprinkle with more flour.

5. Roll gently into a rectangle.

6. Refrigerate for 15 minutes.

Filling:

1 teaspoon ground cinnamon

60g light brown soft sugar

20g caster sugar

30g melted butter

1 medium cooking apple, peeled chopped and cooked in the microwave until soft

Method:

1. Preheat oven to 180◦c

2. Meanwhile cook the apple in the microwave with a tablespoon of sugar and when softened mash with a fork. Spread onto a plate and allow to cool.

3. Mix the filling ingredients together. Spread the filling, topped with the cooled apple all over the dough then roll it up lengthways. Refrigerate for 10 minutes.

4. Using a sharp knife cut the dough into 8 slices and arrange in a flan dish or springform tin. Bake for 20/25 minutes until golden brown. Remove from oven and cool for 5 mins before icing.

For the icing:

60g icing sugar

40g of softened cream cheese

10g butter, 2 drops vanilla extract

Method:

1. Sieve the icing sugar into a large bowl. Add the cream cheese and butter in the centre, add 2 drops vanilla, pour over small amount of boiling water, stir thoroughly.

2. If it is thick add small amount more boiling water to make it runnier. Stir in the vanilla and then drizzle over the rolls.
